Rymill’s landmark winery is now a prominent feature on the Coonawarra landscape. The Rymill Coonawarra Cabernet is partially barrel fermented and sees maturation French in oak. An evolving style, it is the strongest card in the Rymill pack with plenty of cellaring potential. Indeed Rymill has recently added a maturation release Cabernet, essentially a barrel selection with a further 5 years of aging. Rymill MC3 is a blend of Cabernet Merlot and Cabernet Franc with 20 months barrel maturation. Rymill Shiraz, aged for over 2 years in both French and American oak, is also worth seeking out.
