It’s known as the Classic Clare range, and only the very best fruit is labelled under this premium designation.
The Provis Vineyard Cabernet is a single vineyard wine only produced in exceptional years. This blend typically features a small amount of Shiraz. Cassis, dark chocolate, and bay leaf will greet you on the nose, while the palate offers the darkest fruit, tapenade, chocolate, and mint. An evocative and pleasing combination of pure fruit and savoury tones coupled with extraordinary structure and length, this is one impressive Cabernet.
Includes 6% shiraz, hand-picked, berry-sorted by machine, open-fermented with cultured yeast, 10 days on skins including 3 days cold soak, matured in French barriques for 16 months. Clare cabernet doesn't come much better than this - rich and patterned, with layers of blackcurrant and admirable tannin control.

The Clare Valley
The Clare Valley is located two hours north of Adelaide in the Mount Lofty ranges. The region was settled by John Horrocks who encouraged his servant James Green to plant the first vines in 1842. Climate in the Clare Valley is continental with hot summers, cold winters and low rainfall that necessitates supplementary irrigation. Soils in the valley are predominantly red brown loams over shale, permitting excellent drainage. Many of the best vineyards are located at higher elevations of 400-500m on sites that take advantage of the cool breezes that funnel up the corrugation of hills from the south. The Clare Valley is renowned for its zesty fruit-pure Rieslings particularly from the sub-regions of Polish Hill and Watervale. The region also produces intense age-worthy sturdy reds from Cabernet Sauvignon and Shiraz.
