The Cabernet Franc is fermented using carbonic maceration whilst the Pinot Gris is fermented on skins for one month. All wines are then transferred to puncheon to settle out and come together. The wine shows fruit weight and structure without losing any of its finesse. A well-structured palate of bright cherries, raspberries and spice. The wine finishes with soft tannin akin to a great Barolo.

Looks washed out, ha ha, get it? Anyway, pale garnet colour. Nice looking. Bright and juicy, a little creamy perhaps, raspberry and cherry juice, some faint salted nut character, wild fennel notes, some peppery spice. Delicious. Moreish, nourishing feel to this elixir, pretty and floral and really good, is the word.
