This aperitif style Prosecco comes from the Australian home of the style, King Valley. Expect a nose and palate full of green tropical fruits, green apple and a light dollop of honeycomb. A touch of fruit sweetness performs a well-judged balancing act of chalkiness, lively acidity and a touch of savouriness.
The winemaking is focused on keeping the freshness in the wine. After harvest, the grapes are pressed gently and fermented into the base wine which sees a few months on lees. Secondary fermentation occurs in tank before being bottled under pressure.
