The Ramon Valle Mencía is made from handpicked, 100% Mencía fruit sourced from 45-55-year-old vines planted at 450-580m above sea level.
Black cherry-coloured with intense violet hues, a mature wine. Highlighted on the nose are ripe red fruits, minerals and blue flowers. Fine and exquisite on the palate as it is fleshy, fragrant, and full-bodied.
'Wine is a living element in constant evolution'
Cool pre-fermentation macerated for 3-5 days at 4-6ºC followed by a week-long (or more) fermentation. Malolactic fermentation takes 6-10 days which is followed by two months in stainless steel tanks breeding on fine dregs and two months in bottle.
