<h2>Old vine, single vineyard Listan Negro from the volcanic soils of Tenerife</h2> <p>Made from 100% Listan Negro from the 0.4 hectare vineyard of ‘El Chibirique’ located high up the volcanic slope. The vines are aged between 60 and 80 years old and grown at an elevation between 380 and 430 metres above sea level.</p> <p>Sustainably farmed, using organic practices, the vines are trained in the unique free standing, braided ‘Cordon Trenzado’ fashion. The soil is composed of a clay layer over volcanic rock with the whole plot in the natural shape of an amphitheatre.</p> <p>After hand harvesting, grapes are fermented with 100% whole clusters, exclusively using indigenous yeasts, in unlined concrete tanks and in some inert plastic vessels. A longer time on skins is employed for this parcel.</p> <p>Ageing occurs in second-year 500 litre and 228 litre French Oak Barrels for 10-12 months, wherein malolactic fermentation takes place.</p> <p>No use of enzymes or enological products, Unfiltered, unfined, Vegan friendly Low Sulphur – nothing added artificially, as it is a naturally occurring element in the vineyard, the resulting wine lands around 13% abv.</p>
