Thomas Pico, based in Courgis, has been cultivating his family's land at Domaine de Bois d'Yves, totaling less than 3 hectares, since 2005. His journey began with the transition to organic farming, driven by a profound commitment to respecting a terroir that is often overlooked despite its lack of grandeur or famous appellations.

The modest size of his vineyard grants him the ability to personally oversee every aspect of its care. Pico's Chablis wines, best savored in their youthful splendor, typically shine their brightest between two and seven years of age, displaying their abundant fruitfulness.

In regards to the wines: Chablis, as always, exemplifies maturity and remains steadfast in its pursuit of precision. It's worth noting the subtle hints of cooked apple, which add a unique dimension to its character, veiling the pureness one might anticipate. Moving on to the Côte de Jouan, it boasts an impressive fullness, a delightful density, and a finish that rivals premier crus. The Beauregard terroir offers genuine depth and texture; its wine, enchanting and energetic, concludes with a remarkable flourish. Vaillons is even more captivating, with a patina from aging that lends it a luscious richness. Lastly, the Butteaux stands out for its exceptional precision, truly worthy of a grand cru designation.
