PENFOLDS Bin 407 Cabernet Sauvignon, South Australia
Penfolds Bin 407 is an elegant style with clear varietal blackcurrant, cassis aromas, fine-grained firm tannins and underlying savoury oak. First produced in 1990, Bin 407 Cabernet Sauvignon is based on a rigorous selection of multi-regional South Australian fruit. The wine is matured for 12-14 months in a combination of new French oak and American oak hogsheads with the remainder aged in seasoned French and American oak.

Five South Australian regions, including Coonawarra, a noted cabernet sauvignon specialist, combine in Bin 407. Multi-regional blending is viewed as a form of insurance policy; if one region is affected by bad weather that is hopefully not the case in all. In 2020, South Australia saw its second winter drought which led to wide-spread spring frosts and reduced yields. It’s a double-edged sword, the latter bringing increased concentration to Bin 407, so all was not lost. The result is a tight-as-a-drum cabernet, a slowly evolving young beauty. It will be a pleasure to watch this wine’s journey over the next 10, 20 years or more. The five regions mesh seamlessly across the board with black fruits, spice, thyme, sage, spearmint aroma interplay. There’s a controlling winemaking hand behind all of this, gossamer fine tannins that reach every corner of the wine. They are a noted feature, stamping an authority and contributing to the coiled, taut nature of Bin 407. This isn’t always apparent in 407, but you have to love the elegance it brings. Not to mention the future promise that awaits.

As with the St Henri shiraz, with five regions in play here this is all about varietal expression, measured by a mix of warmer to cooler districts. That allows a broad brush of characters to show themselves here in the immediate cabernet aromas and flavours of cassis, dark berries and fruits of the forest that then get a lovely little tickle of mint derived no doubt from the cooler sources in the Limestone Coast zone. Fifteen months in a mix of French and American oak, a minority new, have offered another layer as well, along the lines of cedar and dark chocolate. There’s lots to love here, from the vibrant cabernet fruit profile to the succulent and expressive tannins that are juicy yet supportive, the palate even and beautifully balanced in its final hurrahs.

The beautiful nose is typically seductive: rich, full and confident, without ever being too heavy or blocky – the mark of Penfolds’ fastidious Cabernet Sauvignon selection from five separate regions. The palate glides along a silky, gossamer weave of vivid red and purple berries, and this glorious choir of luscious and supple fruits is supported by just a hint of wild herbs, a sprinkle of chocolate powder and tannins that support the impressive palate length. Those unmistakable hits of bay leaf, mint and tobacco. Bin 407 is always so unashamedly cabernet. Blackcurrant sweeps confidently in, along with boysenberry, along with sweet herbs, cloves, green olives and cocoa. I love the finesse of both the tannin and the fruit, the long, effortless draw of the finish. Beautiful wine.

Deep red-purple colour leads into a strongly varietal cabernet nose of sweet berries, cassis and framboise, pristine and fresh, ripe yet aromatic, the palate showing the relative leanness and elegance of cabernet of this style, with fine-grained tannins that are measured and harmonious and not too assertive, helping to extend the very long finish. Strong statement of cabernet is the first impression, with violets, blueberries, blackcurrants, fresh leaves and herbs. I like the clarity here. The palate has such intense and rich fruit, with plush, polished and ripe blueberry and cassis flavors. Holds an impressively measured and balanced stance. A blend of McLaren Vale, Barossa Valley, Coonawarra, Padthaway and Wrattonbully. Drink or hold.

The 2020 Bin 407 is a South Australian Cabernet Sauvignon. It is a deliciously fragrant wine bursting with cassis, crushed leaves, cedar plus reserved dark cherry with a nice dash of oak beautifully balanced. Bright and juicy, there is quite lovely initial impact and freshness before it tightens up with a long, focused palate. A delicious tension between fruit and structure provides a beautiful backdrop before underpinning a superbly long and vibrant finish. A very impressive vintage of 407.

This 2020 Bin 407 Cabernet Sauvignon is big and structural—the Cabernet character (the "Cabernosity" of the wine) sits behind a parapet of oak, and the tannins are finely knit and tightly clenched around the fruit. Unpicking the structure from the finish reveals smoked cassis, resinous char, star anise and sticky lamb fat. It's a big-shouldered, muscly wine. This is fierce and concentrated and will live an eon, but in my opinion, it lacks the finesse and poise that I want to see in Cabernet Sauvignon. The oak regimen—15 months in French (24% new) and American (12% new) hogsheads—and regional makeup has something to do with that: McLaren Vale, Barossa Valley, Coonawarra, Padthaway and Wrattonbully. There are a lot of good Cabernet regions in there, but in combination, they lose their identities—although, that has long been the appeal with this wine. Choose your own adventure.

An unambiguously good cabernet in the mainstream of Penfolds' vast knowledge of South Australia's hot (meaning good) spots for the variety. It's a polished, well-balanced expression, with winemaker Andrew Hales having made some lovely Coonawarra cabernets along the way.

Penfolds is one of the world’s most celebrated winemakers with an enviable reputation for quality at every price level. Christopher Rawson Penfold began it all in 1844. A doctor, with an eye for medicinal winemaking, he and his wife, Mary sought a new life in Australia with a vine cutting and a bold vision. The family purchased Magill, now a suburb of Adelaide, and set about inventing tonics, brandies, and fortified wines made from grapes and Australian sunshine. The Penfolds House Style emerged from this craft of fortified wine production and blending.
The success of Penfolds has been driven by a lineage of visionary winemakers who pushed innovation to bold new heights. Max Schubert, the creator of Penfolds Grange, Dr Ray Beckwith and their team pioneered: major advances in yeast technology and paper chromatography; the understanding and use of pH in controlling bacterial spoilage; the use of headed down/submerged cap fermentation and the technique of rack and return; cold fermentation practices; the use of American oak as a maturation vessel and perhaps most critically, partial barrel fermentation. The use of American oak and barrel fermentation is considered traditional Barossa winemaking practice, in large part due to the work of Penfolds.
Today, the art of blending remains integral to the Penfolds House Style - a unique combination of highly defined fruit aromas, ripe tannins, richness, power and concentration. The most powerful expression of this is the flagship, Grange, now recognised as one of the most consistent of the world’s great wines. Similarly, Bin 389 Cabernet Shiraz, first released in 1960, is now considered the quintessential Australian wine blend. Improved vineyard management, site selection and winemaking brought about the subsequent releases of Penfolds wines such as Bin 707 and Bin 407 Cabernet Sauvignon – both highly acclaimed and collected wines to this day.
The Penfolds Philosophy is the accumulation of nearly 180 years of shared knowledge and continual refinement. This began with Dr Christopher and Mary Penfold, continued with Max Schubert, Ray Beckwith and generations of Penfolds winemakers leading to the current winemaking team, led by Peter Gago. Their commitment to constantly improving their work, whilst honouring the winemaking techniques of their predecessors, contributes to the consistency of style and quality that Penfolds is known for around the world.
