The fruit for the regular bottling of the Henri Bonneau Châteauneuf-du-Pape is hand-harvested to a very low yield. Whole bunches are naturally fermented in cement tanks before ageing on lees in a variety of old barrels and small foudres for up to 10 years depending on the cuvee and the vintage.
