About this wine
Forest Hill Vineyard Block 5 Mount Barker Cabernet Sauvignon
Hand-picked from the selected small sections of our best old vines. Chilled, hand sorted at the winery and destemmed into open fermenters. Initial cold soak and then inoculated. The fermenters were pumped over with aeration twice a day. The wine is then basket pressed to French barriques (30% new) once primary fermentation is complete for its malolactic fermentation, allowing a soft integration of the grape and oak tannins. The wine is blended, fined, and bottled after 15 months maturation.

Vines planted '75. Hand-sorted, chilled, cold soak, post-ferment maceration, matured for 15 months in French barriques (30% new). A full-bodied, towering wine oozing black fruits, yet retaining balance for a future as long as your patience lasts.

Deep, saturated purple/red colour. Very attractive sweet cassis cabernet fruit aromatics, hints of raspberry as well. The wine is medium to full-bodied and intense in the mouth, with bright red fruit flavours and firm but measured tannins. Long carry. This has potential: it's very good now and will be even better if patiently cellared.
