YARRA YERING Chardonnay, Yarra Valley
Planted in 1969 by the legendary Dr Bailey Carrodus, the unirrigated vines at Yarra Yering produce elegant, complex and powerful wines that helped revive the dormant Yarra Valley. The gentle slope at the foot of the Warramate Hills with its northerly aspect and deep grey silty loam shot through with bands of gravel has good drainage, all day exposure to the warm sun, and enough elevation from the valley floor to avoid the spring frosts. The yield here is low, just one to two tons per acre, resulting in fruit with great intensity, concentration of flavour and with an abundance of natural acidity.
All fruit at Yarra Yering is hand-picked into 10kg picking buckets in the cool of the morning, then placed in a chiller overnight before whole bunch pressing. Fermentation occurs in French oak barrels; a combination of 228 L barriques and some 500 L puncheons, 30% new oak. Both wild yeasts and cultured yeast adds complexity and a hint of wet stone. Natural acidity is retained by inhibiting malolactic conversion. The wine is then matured for 10 months in Yarra Yering’s cool underground cellar before blending and bottling.
Finesse is a hallmark of Yarra Yering Chardonnay, a wine that has weight and texture coupled with a green apple crunch. An energy drives the palate, the fruit is supported by an extremely fine grained oak tannin framework which lingers on the finish.
